To romp or not to romp

1st things 1st - it's hot as hadies in Houston during the summer and I am all for lightweight clothes that you don't make you sweat buckets - but I don't know if I can jump on the romper bandwagon.

Secretly - somewhere deep inside - I wish I could pull them off {and I always say "if you can own it, you can pull it off"}, but I don't know about these bad boys...

This is what I hope to look like in a romper:

{let me be clear - I am not a huge fan of any of the ladies, but they pull it off well}

Here is what I would actually look like in a romper:


Jess - honey - I'm against all the haters who make fun of your weight gain, but when you wear stuff like this I can't help you. {Even if this was during baby stage -  still not a good choice!}

I will give her credit for the bag and the bling...A+ Jess

My conclusion...stop eating...loss half my body weight...wear romper.

365 days

365 days ago, I woke up smiling - thinking about the man I was going to walk down the isle to that day; the man who had been with me through everything for the past 7 years; the man who makes me smile every day...

Day 1 (May 27, 2011) - I married the love of my life and began a journey through the most important 365 days of a girl's life.

Day 5 - We moved into the place that we would call our first home; the place where we would have many more firsts as Mr. and Mrs. 

Day 35 - According to the state of Texas, became Lindsey Peters

Day 40 - We combined the only thing left to combine - the bank accounts :/

Day 94 - I made him a 'good luck on your first day of school' breakfast

Day 181 - We celebrated Thanksgiving with both of our new families - as a true member of each

Day 199 - I hopped on a plane to one of the most beautiful places I have ever seen, where I spent my honeymoon with the one man who makes life worth living.

Day 212 - We hung the traditional "Our First Christmas" ornament on our very own tree.

Day 365 - Again, I woke and smiled. This time at the man lying next to me and realized that I if I can wake up next to him everyday, my life is complete. 

I can truly say that even though we have had our ups and downs, all along the way, I wouldn't trade one day.

Thank you for the best 365 days a girl could dream of. Let's shoot at least 18,253 more.

Love & marriage part 2 - the shower

So the other day I posted this about my two friends who are getting married in a few weeks!

Well I forgot to mention more about their shower - i.e. what we got them and what I wore of course haha

The outfit - two rules 1.) NO WHITE - do not be that girl and 2.) Don't upstage the bride

In a panic the morning of the shower I realized, I didn't have anything to wear {or in my husband's terms - I don't like anything in my closet} - so off to the mall we headed and an hour and $29 later we bought this little number

The gift - you know me and my creative crap, so I had to do something different. I am not a fan of just giving a wrapped box - BORING!

This idea is very simple especially if the Mr. and Mrs. register for a kitchen set {you know - the spataula, spoon, can opener, etc}

All you need is that set {or just buy individual pieces from their registry list} and a cute pot holder that matches their soon-to-be community kitchen and voila...


{you can't see everything in this picture, but there are measuring cups in the bottom and various utensils sticking out of the top - and then the card of course}
 I don't think they make new wedding cards very often - because I saw them open several that looked pretty familiar :/
The shower was a success and wonderfully done. It was an Italy themed shower because the happy couple are jumping aboard a cruise ship to Italy for their honeymoon! {cue my vacation fever again!}

First comes love, then comes marriage

It's that time again...wedding season!

Last weekend we went to a shower for some old high school friends who are finally getting hitched! The craziest part is that me and the hubby knew the couple separately at different times...confused?

You see - Brian and I go way back...he was one of my first friends in high school; and he and hubs - even farther back....we're talking little leaguers


{check out the hubby's long hair! haha}

As for Ms. Emily her and I were yearbook nerds together in high school - oh how I wish I could find those pictures! {Six Flags ring any bells??}

And the hubs met her when she was my roomie in college and now they are law school preps together.

{yes I'm dressed like a deer and her a mummy...and?}

So one ridiculously mildly drunken night - BT's birthday I do believe - I thought it would be a great idea to convince these two drunkards to kiss and folks it was all down hill from there!

Congrats to you both! We can't wait for June 16th!

Ugh - decisions, decisions.....YEAH RIGHT

It's official - I have travel fever...

Maybe it's because my in-laws are laying on a white sandy beach as we speak OR my coworker Tessie, who is currently practicing being a newlywed on a white sandy beach OR my two super cute college friends who are getting hitched in a couple weeks who are jumping aboard an Italian cruise

So, basically, I need June to hurry up and get here so I can start racking up those frequent flyer miles...here I come...

Peepers

No matter how crappy I feel - if I put on a my eyes I feel like I can tackle the day!
{That goes for contacts too - glasses just don't make me feel my best}

But most importantly is a girl's mascara...there is something about it that just makes you feel instantly like a girl. {That a good pair of heels of course}If I wear nothing else - I will take a few minutes to put on mascara.

That is why the ever lasting search for the perfect mascara is always on my mind and I swear it never fails that as soon as I think I have found "THE ONE" somebody tells me about "the best mascara they have ever tried" and the search begins again!

So at the moment I am currently packing on the layers of this fabulousness in a tube:

Kind of creepy, but check out the results!
{Don't judge my eyebrows damnit...I'm getting them done this weekend!}


I don't know about you - but I just think it does a great job of creating think, full, dark lashes that are perfect for every look! Agree? - Get it here!

There is no sincerer love than the love of food

As a newlywed {one year anniversary in just a few days!} I have fully embraced my domestic wifeyness and try to make yummy dinners for my hubby as often as possible 

If you ask him he will probably tell you I succeed {every once in a while} BUT if you ask me this recipe is my best dinner hands. down.

{Warning: long post - totally worth it because the result is better than chocolate cake and ice cold milk!}

Here we go - Sorry, I forgot the ingredient picture! Note: I cut this recipe in half because, honey, I do NOT need 20 enchiladas.

Crawfish Enchiladas
1 stick unsalted butter, in all {JUST DO IT!}
1 cup finely chopped onions
1 cup canned green chilies, drained and chopped
3/4 cup finely chopped green bell peppers
2 3/4 teaspoons salt, in all
2 3/4 teaspoons white pepper, in all
1 1/2 teaspoons, in all, ground red pepper(preferably cayenne)
1/4 c white wine
3/4 teaspoon dried oregano leaves, in all
1/2 teaspoon minced garlic
3 cups heavy cream
1 cup dairy sour cream
8 cups, in all, grated Monterey Jack cheese, 2 pounds
2 pounds peeled crawfish tails
2/3 cup very finely chopped green onions
1/2 cup vegetable oil
20 (6-inch) corn tortillas





Okay first things first: In a large skillet melt 1/2 stick of the butter. Add the onions, green chilies, bell peppers, 1 1/4 teaspoons of the salt, 3/4 teaspoon of the white pepper, 1/2 teaspoon of the red pepper, 1/4 teaspoon of the oregano and the garlic. Sauté over medium hear for 10 minutes, stirring often. 
{Note: They are pretty spicy so go easy on the red pepper if that isn't your thing}



Next: Stir in the heavy cream and bring mixture to a rapid boil; then reduce the heat and simmer uncovered 10 minutes, stirring constantly. Add the sour cream; with a metal whisk, beat continuously until the sour cream is dissolved, about 3 minutes. Add 3 cups of the cheese and stir until melted. Set the sauce aside. In a 4-quart saucepan melt the remaining 1/2 stick butter. 








Now: In a separate pan, add the crawfish, green onions and the remaining 11/2 teaspoons salt, 2 teaspoons white pepper, 1 teaspoon red pepper and 1/2 teaspoon oregano. Sauté over medium heat for about 6 minutes, stirring occasionally. 







It's time to add: the cheese sauce to the crawfish mixture and stir well. Simmer until the flavors are well blended, about 6 to 10 minutes, stirring occasionally. Set aside. 
{Note: I added the crawfish to the sauce because it was easier and it worked just fine}
{Note 2: At this point your kitchen will smell like Heaven and you WILL want to eat directly from the pan - DON'T or there won't be any left for  your enchiladas fattie!}






Next: In a small skillet heat the oil to about 325 degrees F. Holding tortillas one at a time with metal tongs, dip each into the hot oil just long enough to soften, about 1 second  each side; drain on paper towels. Spoon about 1/3 cup crawfish sauce on each tortilla and roll up  tortilla.  For the prettiest presentation, broil the enchiladas: Put them all, seam side down, in a flameproof baking dish. 
{Note: I used flour so the oil step wasn't necessary}


Finally: Cover each enchilada from end to end with a generous amount of additional sauce, then sprinkle each with 1/4 cup cheese. Place the baking dish (or two or three individual plates at a time) under a broiler near the flame until the cheese melts and begins to brown, about 2 minutes. Or, bake the enchiladas in a 350 degrees F. oven untilthe cheese melts, about 5 to 8 minutes.



All that is left is to dig in and then quietly slip into the food coma that will ensue as soon as your done! 
These were a big hit with the hubby, the co-worker and every other human I know who had one bite.

Woman's Best Friend

First let me say that I haven't thought about blogs - looked at blogs - written blog posts - or even talked blogs in WEEKS!

Today I finally got to take a few hours minutes to update myself on everyone's little blog worlds and I realized one thing - I. MISS. BLOGGING.

So ladies and gents - I am back and what better post to start with than one about a stinky, hairy, 4-legged beast who I am pretty sure is secretly a human on the inside, therefore we just pretend he is our child.

Exhibit A: Yes we dress him up for fun and to take disgustingly cute pictures to show the grandparents




                    I know - He is his father's son!

Ugh - those eyes kill me. EVERY TIME.
