National Margarita Day!!

I am not a big drinker, but if the drink starts with "Marga" and ends in "rita" COUNT. ME. IN.

Any flavor, any time, frozen or on the rocks - I'm there! And who am I to not honor a NATIONAL holiday...really - how unpatriotic would that be!

So in honor to National Margarita Day here is a GREAT alternate version to the classic margarita:

3 parts pomegranate juice
3 parts orange tequila
1 part orange liqueur or Triple Sec (recommended: Cointreau)
1 part sweet and sour mix
1 1/2 cups ice cubes
Lime wedge, for garnish
Combine all ingredients, except lime, in a pitcher. Stir. Pour into a margarita glass and garnish with lime wedge.

TV Junkie

If I could spend an entire weekend catching up on all the mind numbing educational shows on my dvr I would be in heaven.

It is FULL of the world's best day time and night time television:
- Days of our Lives
- Desperate Housewives {tears will flow on the final episode}
- Grey's Anatomy
- Smash {I may or may not sing along during the entire show}
- The Voice
- The Bachelor
- Pretty Little Liars

Can it get any better??? I think I will always be a TV junkie...sad but true!
{Especially when I get to see such fine gentlemen as Mr. Blake Shelton...althought I don't know who I love more - Blake or Miranda!?}
Halloween 2012 idea??? Hmmm...I like!

Spiderwebbing for a second...I will be seeing Mr and Mrs. Shelton at Rodeo Houston 2012...who are y'all seeing???

Dinner Disaster

I can't always be Susie Homemaker and the other night's dinner was the PERFECT example....to bad it had to be the Valentine's dinner I made mr. wonderful

Here is how it was SUPPOSED to go -

Roasted thyme potatoes * shitake mushroom dusted juicy steak * crabcakes with lemon aoili sauce * creme brulee - all cooked to perfection with love for my hubby!

{I was even going to look super cute doing it with my new apron!}

Here is how it REALLY went -

1.No roasted potatoes...because I forgot to buy them - enter instant mashed potatoes {do not judge, they were a last ditch effort!}

2. No shitake mushroom dust {no that is not a reference to drugs folks lol} because apparently no grocery stores in the freaking city carry dried shitake mushrooms

3. No juicy steak because ladies and gentlemen, luck just wasn't on my side this time - seriously I must have gotten the toughest steak in HEB!

4. Still on the steak, the amount of smoke that filled my kitchen {and entire house} as I tried to grill them on my griddle created a gag worthy romantic scene!

5. The crab cakes tasted wonderful...but would be better called crab cake pieces as I had a grease filled pan with tiny crab cake pieces floating around while they burned fried

6. If you have never made a lemon aioli to go with your crab cakes...do it. It is wonderful...when it works correctly. Without turing into your 5th grade science teacher...you are basically causing a chemical reaction when you combine the water and oil at a high speed and forming a very thick creamy sauce. 3rd times the charm right??

7. I will pat myself on the back for the creme brulee though because while I could have made 16 dinners in the time it takes to make one batch of creme brulee...my hubby sure scarfed it down. {willingly}

{This is the only picture you will get - as all the others went up in smoke...haha...get it? no? okay anyways}

And after all this...I didn't even remember to put on the damn apron...so when hubby got home I was barefoot, still in my work clothes and sweating from all the smoke...Happy Valentine's Day babe!

P.S. - here is the wonderful creme brulee recipe I used!
2 cups heavy cream
1 vanilla bean, split lengthwise
4 large egg yolks
1/4 cup, plus 1 tablespoon sugar
1/3 to 1/2 cup white granulated or light brown sugar
Preheat oven to 300 degrees F.

In a heavy-bottomed medium non-reactive saucepan, heat cream with vanilla bean over medium-low heat for 15 minutes, stirring to ensure it does not burn; do not let boil. Remove from heat and let steep for 15 minutes. Remove and discard the vanilla bean, or save for another use. Strain cream through a fine mesh sieve.

Meanwhile, in a mixing bowl, beat egg yolks with an electric mixer on high speed for 5 minutes, or until light and fluffy. Gradually beat in 1/4 cup plus 1 tablespoon sugar. Add about half the cream mixture, a little at a time, to the egg mixture, whisking until well blended. Then pour the egg mixture into the remaining cream mixture. Stir until completely blended.

Pour the custard into 4 (9-ounce) ramekins or custard cups. Place the dishes in large baking pan. Pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake for 35 to 40 minutes or until the mixture is set in the center (it should still wiggle when shaken). Carefully remove the dishes from the baking pan. Let cool to room temperature and then refrigerate for at least 2 hours, or up to 24 hours. Let creme brulee stand at room temperature 20 minutes before serving.

Divide 1/3 to 1/2 cup white or light brown sugar in a thin, even layer over each custard, covering it completely. To caramelize the sugar, light a propane torch* and hold it so the flame just touches the surface. Start at the center and spiral out toward the edges of the ramekins. If the sugar begins to burn, pull the torch away and blow on the sugar to extinguish the flame. Serve immediately.

So what has kept me from entertaining you people with all my clever antics all these days??

LIFE {well that and trying to catch up with Days of Our Lives}

Since January, my work and home life have been racing at full speed to see which can kill me first...in a picture...I sometimes feel like this:

My good friend Tess {check her out at AModernSuburbanitesLife}, who I helped ask her Maid of Honor with this sweet idea asked me to help her create her save the dates and they are uber cute, if I do say so myself!

One of my family friends who is like a second mom to me has started her own catering company, 6th Street Catering & Events, and asked me to do the marketing for her. I jumped at the opportunity to get some real life graphic design work and help out an AMAZING lady!

New Obsession

Ladies and gentleman as if I needed another reality show to fill my days...but I have found another ridiculous obsession.

The Voice.

The suspense of those goobers spinning their chairs around kills me EVERY TIME! I don't know if my obsession will continue once the enthralling blind auditions are over, but we shall see!

P.S. - For those of you who have been watching yesterday and today, please don't be distracted my Christina's boobs trying to escape their cage

Super Bowl Guilty Pleasures, Part One

So Sunday's the big game huh? Super Bowl 128,978 or something close to that.

I don't know about you, but I am going to be honest and say that the best part about Super Bowl for me is the fact that I have an excuse to feed my face ALL.DAY.LONG. - Enough said!

Everyone knows you have to bring something to the party and for those people who have more day than they do time, this is a great and easy snack!

{you may want to leave some at home because they will go quickly!}

Want to know how long I slaved over these bad boys? No lie - 4.5 minutes

Step 1: Place Rolos {man I loved these as a kid} on a cookie sheet about an inch or so apart

Step 2: Warm them in the oven until they get mushy {Don't let them completely melt, just until they start getting soft...maybe a minute}

Step 3: While they are still soft smoosh a whole pecan on top and Voila!

Now I know that was a very technical process and had some pretty scientific words, such as, mushy...but I trust you can do this!

Girls Night Out

My loving better half recently bought me 2 tickets to the Girl's Night Out event that KSBJ was hosting last FRiday.

PART 1: The star act was one of the funniest woman on the planet and the woman that every other woman should see once in her life, because she pretty much says everything we all think and she. is. hilarious!

Case in point:

If you have kids, have siblings, work with kids or have ever even known a pint size rugrat then I would bet money that you are laughing right now. And that is exactly what ever woman in the room did through the entire conference.

PART 2: The second speaker was Lysa TerKeurst, of Proverbs 31 Ministries. If you don't know her (I didn't) then you should. She is one of the most amazing, eloquent, uplifting and enlightening women I have ever had the pleasure of meeting. The stories she told and the messages she spoke about were truly eye opening.

Here is one of my favorite things she said - Life is messy {understatement of the year folks}

When it's truly the messiest of times, you feel alone and like nobody is there to help. And what a coincidence, the word Messiah..contains the word "mess". He will always be there right in the middle of your deepest and darkest mess ready to pull you out. If you want him to...{think about that}

My second favorite thing she said was "Don't let your mess DEfine you, let it REfine you" I can think of more times that I would like to admit that I let my mess define me and let countless hours, days even weeks waste away that I can never get back. Ever. - Is anything worth that?
